Homemade Vegan Cookies Recipe

3 or 4 ripe banana’s
1 cup natural brown sugar
3/4 cup oil (coconut or olive)
1/2 teaspoon sea salt
4 cups natural rolled oats (separated)
i teaspoon natural pure vanilla (optional)

1.) mash bananas well in a bowl set aside

2.) blend brown sugar and oil together

3.) mix vanilla, sea salt and mashed bananas into brown sugar and oil

4.) mix in one cup at a time of the oats until well blended

Now you can get creative!  I like to add 1/2 cup of my chocolate chips (no soy, nondairy, all natural) and 1/2 cup coconut and 1/2 cup almonds or pecans.

You can add whatever you like, just be sure to use half cups if adding more than one thing, if only two you can use like 3/4.

Using a tablespoon, spoon out rounded spoon fulls of the dough onto a lightly oiled (coconut or olive) cookie sheet, about an inch apart, round it out on the sheet using the spoon and gently flatten it (not too much) just enough to where it’s around maybe an inch and half tall.

Bake at 350 degrees for about 20 minutes.

Let sit for about 10 minutes and serve.  I like to freeze them and take out one as I want.
