Spaghetti Squash Salad Gluten Free & Vegan

And they came back for Seconds..

It’s quick and easy if you’d like to try.  I would LOVE to hear about it if you do.  I used this exact spiralizer to make the noodles out of one yellow squash and one zucchini squash:

You can boil the noodles or keep them raw they are great either way.

In a large mixing bowl I added the spiralized squashes. If you boil them, strain first…

I did everything else by “eye”,

1 large diced tomato
1 diced cucumber
1 handful of mixed micro greens
A few dashes of Black Pepper
A half dozen dashes of Ginger Powder
A few Dashes of Turmeric Powder
Couple Splashes of Raw Unfiltered Rice Vinegar
Couple Splashes of First Cold Pressed Extra Virgin Olive Oil
First cold Pressed Garlic Juice (or minced garlic to taste)
If you want some HEAT add some Cayenne pepper powder.
Mix it all up and Enjoy!

A slice of ripe avocado wedges would go really nice with this too if you want.
